Carrot and Coriander Soup
Ingredients
- 25g butter
- 1 onion, chopped
- 1 garlic clove, crushed
- 25g plain flour
- 1 litre chicken stock
- 450g carrots, chopped roughly
- 2 tsp fresh coriander
- salt and pepper
Method
- Melt the butter in a pan and soften the onion and garlic
- Blend in the flour, and then add the stock gradually
- Add the carrots and coriander. Bring the soup to the boil and simmer for 15 minutes
- Blend and adjust seasoning
