Carrot and Coriander Soup

Serves 4

Ingredients

  • 25g butter
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 25g plain flour
  • 1 litre chicken stock
  • 450g carrots, chopped roughly
  • 2 tsp fresh coriander
  • salt and pepper

Method

  1. Melt the butter in a pan and soften the onion and garlic
  2. Blend in the flour, and then add the stock gradually
  3. Add the carrots and coriander. Bring the soup to the boil and simmer for 15 minutes
  4. Blend and adjust seasoning
