Ingredients
- 2 eggs
- 1 tsp vanilla extract
- 130g coconut oil
- 2 soft, ripe bananas (approximately 160g), quartered
- 220g self-raising flour
- 1 tsp cinnamon
- 75g caster sugar
- 110g brown sugar
Method
- Preheat your oven to 170ÂșC.
- Fill a 12 slot muffin tray with cases
- Blitz the eggs, coconut oil, vanilla extract and bananas in a food processor until you have a smooth batter
- Add the self-raising flour, cinnamon, caster sugar and brown sugar to your food processor and mix again until it
comes together, scraping down the sides before a final mix
- Divide the mixture between the 12 muffin cases and bake in the oven for 15-20 mins until a skewer comes out clean
